Big Frog's Famous BBQ Pork Ribs

!Ingredients * 2 or 3 slabs of baby back (pork) ribs * Rub * BBQ Sauce - your choice, I like sweeter Hawaiian. !Rub: * 4 tsp chili powder * 1/2 tsp cayenne pepper * 2 tsp salt * 1 1/2 tsp ground black pepper Apply rub to ribs. !Grill Charcoal (with some hickory chips) is best, but gas will work. Place charocal 2-3 layers deep on one side of the grill. Place ribs w/ rub meat side up on other side of grill. Cover with the holes on the cover over the ribs (drawing heat from the charcoal across the ribs and out the top). Keep covered and *don't peak* for 1 hour. After 1 hour, flip and rotate the ribs, closing the lid for 30 minutes. Open the lid, apply BBQ sauce. Cover and cook for 30 more minutes. Enjoy. [http://www.bigfrog.net/archives/bbq_ribs.jpg]
